Rinse the rice 2-3 times in the pot, letting the water overflow. Strain the rice and add 3-4 parts of cold water for each part of rice. Add a pinch of salt and place the pot on the stove, preferably with a flame diffuser underneath.
Bring to a boil, put the lid on, reduce the heat and let the rice simmer for about 30 minutes. Turn off the heat and let the rice sit in the covered pot for half an hour before serving.
